Why fresh-frozen matters when you are buying meat
Chris Brandlin explains why he sources low-histamine meat fresh-frozen and direct from American farmers rather than off a supermarket shelf.
The mechanism is simple enough. Histamine accumulates in meat as it ages, so the interval between processing and preservation matters more than most shoppers realize. Meat that is frozen quickly after processing has less time to develop it than meat that spends days in transit and then several more in a display case. For people with histamine intolerance, that interval is the difference between a meal that sits well and one that does not.
Buying beef direct from a farm also shortens the chain in a second way: fewer intermediaries between the rancher and the plate usually means more of the money reaching the person who raised the animal. That is the affordability argument as much as the health one, and it connects to the affordability work for Nevada families.
