Taking apart the food pyramid
Chris Brandlin and Steve Sanchez work through the food pyramid — how the guidance was constructed, what it recommended, and how they read its effects on metabolic health.
The historical case they make is that federal dietary guidance was never a purely scientific product. It emerged from a process with agricultural and industrial input, and its grain-heavy base reflected that as much as it reflected the evidence available at the time. Reasonable nutrition researchers disagree about how much of the subsequent rise in metabolic disease can fairly be attributed to it, and this is presented as their reading rather than settled consensus.
The Nevada-specific angle is what the state actually controls: what schools serve. Federal guidance sets a floor, but menu decisions above that floor are made much closer to home.
